Chorizo Stuffed Chicken


Sorry, no video yet... lost a cable and had to order a new one. Isn't that how it always goes? I have pictures though? (joyful boogie dance inserted here). FOOD PORN! ALERT!




Simple recipe really:

2 bare chicken breasts (in KK terms that means no skin, no bones)
1 package of seasoned stuffing mix/bread crumbs
2 cups chicken stock
3 oz Chorizo sausage (ooohhhh! yum!)
2 tablespoons butter (melted)
Chile flavored Avocado Oil (I picked some up a Temecula Winery: Oak Mountain Winery)

Preheat oven to 350 degrees

Pour the cook a glass of wine! (Pinot Grigio pairs well)

Cook Chorizo in small saute pan until cooked through. Pour off oil. Set aside. In mixing bowl mix together seasoned stuffing, melted butter and chicken stock. Add in cooked Chorizo.

Cut a pocket into the bare chicken breasts, stuff with stuffing mixture. Heat fry pan with a couple tablespoons of Avocado Oil. With tongs transfer stuffed breasts (the chicken ones!) to a warmed and well oil coated pan. Brown the breasts on each side for approximately 4-5min each.
Spread the remaining mixture of stuffing on greased square casserole dish. Place browned breasts (the chicken ones!) on top of the spread stuffing. Cover and bake for about 30 min.

Remove, top with a little cheese and salsa if you like, or just do a Salsa Dance around the kitchen with wine glass in hand, because, well if I had video you would see that is what KK does when she is in her happy place! The Kitchen!

First Blog Post for "What's Cooking With KK"


Well on my way... I have nothing to loose and so much happiness to gain from finally pursuing my passion: "Food & Friends"! This is my first blog post for my new adventure in cooking, video podcast and lots of fun times to share with you my friends and family. Those who know me best, know these are the things that "KK" (that's my nickname") loves to do!

All the greats advise to be a success you must first follow your passion. "What is it you love to do?" I am here to experiment and see if I can do just that, follow my dreams, my passion and have a lot of fun doing it. So, sit back be prepared to laugh, have some fun with me and please keep in mind I am not a professional, but just enjoy creating fun cooking experiences!
